Vegetable Quiona Chicken Soup

Time: 35 minutes

Serves: 8


  • 8 cups low sodium chicken broth
  • 4 frozen chicken breasts
  • 4 cups cooked quiona
  • 2 cups frozen, mixed veggies
  • 1 cup chopped spinach
  • 2 tablespoons garlic powder
  • Squeeze of lemon juice
  • salt and pepper to taste


  1. Combine all ingredients in a pot
  2. Bring to a boil and reduce to a simmer
  3. Take out chicken breast and shread, or dice, then return to the pot
  4. Serve

How SIMPLE is that?!?
