Turkey Tacos

Being part Mexican on my mother’s side means I was raised on tacos and encheladas.  However, my mother always made them with fried tortillas and beef, not the healthiest of ingredients.  So when I started on my health journey I knew I had to find a way to make these family favorites healthier so that I could still enjoy them.  Also, I wanted R and Q to know that just because something is healthy doesn’t mean it doesnt taste good.

Time: 30 minutes

Servings: 4

Ingredients:

  • 1 lb ground turkey
  • 3 tablespoons chili powder
  • 1/2 tablespoon garlic powder
  • 2 teaspoons of cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 6 in. corn tortillas
  • Shredded cabbage
  • Shredded cheese
  • Dices tomatoes
  • Diced onion

Directions:

  • Brown tukey in a pan
  • Once brown, stir in chili powder, garlic powder, cumin, cayenne pepper, and salt.
  • Once fully mixed, put seasoned meat into tortillas and top as desired
