Garlic Shrimp & Spinach Pasta

I just love Shrimp and with it being such a low calorie protein it’s an amazing tool for weight loss.  So this Garlic Shrimp and Spinach pasta dish was just up my ally.

Time: 20-25 Minutes

Serves: 4

Ingredients:

  • 2 tablespoons of butter
  • 1 tablespoon garlic
  • 1/2 package of quiona pasta
  • 2 handfuls of spinach
  • A bag of frozen shrimp

Directions:

  1. Begin cooking pasta according to package
  2. While pasta is cooking, add butter to a pan on medium heat
  3. Once melted, add the garlic
  4. Saute the garlic for 1-2 minutes
  5. Add the shrimp to the garlic and cook until shrimp are pink
  6. Add the spinach and saute
  7. Once pasta is al dente, drain
  8. Add the shrimp and spinach mixture to the pasta
  9. Toss and serve
