Deconstructed California Roll Bowl with Cauliflower Rice

This Deconstructed California Roll Bowl with Cauliflower Rice has been my go to lunch since starting 2B Mindset.  It is a quick simple meal that is just so tasty.

You get all the flavors of the roll without having to deal with making them into sushi rolls (which can get messy and time-consuming). And the Cauliflower rice is low carb and fits in with our #veggiesmost mindset.

Just keep in mind if using for lunch you need to add an FFC to keep it plated correctly.  You could even swap in some Quinoa or Brown Rice and it would still be delicious.

INGREDIENTS:

  •  1 cup cauliflower rice
  •  2 tsp seasoned rice vinegar
  •  1/4 large avocado pitted, peeled and thinly sliced
  • oz imitation crab meat
  • 1/2  cucumbers thinly sliced
  •  1 tsp toasted black sesame seeds
  •  1 tsp toasted white sesame seeds
  •  1 nori sheet shredded into small pieces

SRIRACHA MAYONNAISE

  •  1/4 cup mayonnaise
  •  3-4 tsp sriracha sauce

DIRECTIONS:

  1. In a small bowl, mix mayonnaise and sriracha sauce until evenly mixed. Set aside.
  2. Steam cauliflower rice until tender. While rice is still hot, drizzle with rice vinegar and mix vinegar into the rice. Taste and add more vinegar if needed.
  3. Add 1 cup of cauliflower sushi rice to your bowl and top with 4 oz. of crab meat.
  4. Place cucumbers and avocados on top and garnish with black and white sesame seeds.
  5. Drizzle with sriracha sauce.
  6. Right before eating, add shredded nori to bowl. You do not want to add the nori ahead of time because it will soften almost immediately.

This also makes for a great meal prep!! Just multiply everything by 4 and you can store them in the fridge for up to 5 days.
